Constance Demke Peterson (86), wife, mother, grandmother, great-grandmother, artist and friend died on September 27, 2022.
Constance was born in the home she grew up in on 6th east in Salt Lake City, UT on Aug. 14, 1936 to Hyrum and Eva (Graeske) Demke. She was the 2nd of 4 children with Shirley the oldest then Dennis and Maxine. Growing up in Salt Lake she attended the local schools and enjoyed singing with several choirs including the Sacra Dolce Choir which led to the meeting of her husband Gerald.
Coni and Gerald were married Feb. 29, 1960 and then later sealed in the Hawaii Temple. She and Gerald welcomed 7 children Gerald Jr (Coni) (Roosevelt, AZ), John (Lisa) (Woods Cross, UT), Bobi Oliver (Stan)(St. George, UT), Max (Nicole) (Orem, UT), Debra Pearson (Todd) (Hillsboro, OR), Yoshi and Matthew (Michelle) (American Fork, UT).
Coni had a great love for children and raised numerous foster children and her niece Katie Rose Facer as her own. She had a wonderful reunion with foster child John Michael many years after he had left home and treated him like her own.
Constance lived in many parts of the west with her family starting in Honolulu, HI, Lancaster, CA, Cortez, CO, Orem, UT and finally Pleasant Grove, UT. Gerald and Coni took off to Alaska for the entire summer while pregnant with Matthew. She was always up for an adventure whether camping, traveling, riding on a boat in Tonga or working on the job site with her husband.
Coni put her artistic talent to use by operating Coni's Warehouse where she taught painting and also did custom framing. She then opened Chantilly's in the Cottonwood Mall and operated it for a few years. Her grandkids remember visiting Grandma at whatever store she was running and having the run of the place. Her grandkids remember going to the movies with her in the white van with no seat belts and all her boutique supplies
Constance was a member of The Church of Jesus Christ of Latter-Day Saints and was an active participant in the ward choir, even holding choir practice in her own home.
Constance is survived by her spouse Gerald of 63 years, her children and their spouses, 19 grandchildren and 15 great-grandchildren. She was preceded in death by her parents, sister Shirley, brother Dennis, daughter Yoshi, granddaughter Eva Jo Larkin & grandson Ethan Cole Peterson.
Services will be held Monday, Oct. 3, 2022. A viewing will be held from 10:00am - 11:00am at Walker Sanderson Funeral home, 646 E 800 N Orem, UT. Graveside service at 11:30am at Orem City Cemetery, 1520 N 800 E Orem, Utah.
