She was born on July 29, 1958 in Cleveland, Ohio to Robert and Dorothy Bischoff of Chesterland, OH. She was the fourth of six children. As a young adult she travelled to Utah where she met Michael Earl Mitchell of Provo, UT and together they had a son, Michael David Mitchell. Michael Earl passed unexpectedly, and Holly took young Michael back to her home of Ohio. It was here that Holly met and married Mark Inkster. They had two daughters, Lindsey Beth and Tera Kate (Katie). They moved their young family to Abbeville, South Carolina. Holly and Mark later divorced, and Holly found herself back in Utah to be closer to her family. Holly enjoyed cooking. She especially loved her Filet Mignon, which she would look for a reason to treat herself to a good steak. She recently found a love for Genealogy work and family history and received an award for the most Genealogy work performed. Holly found peace in frequent trips to the local Temple doing many sessions in part of her genealogy work. Holly enjoyed many simple things in life, and a favorite pastime was to sit and watch hummingbirds feed from the hummingbird feeder. Holly is preceded in death by her parents, Robert and Dorothy Bischoff. A sister and brother-in-law Carol and Bill Hoeingman. And, a lost love, Michael Earl Mitchell. She is survived by her son Michael (Kelly) Mitchell of American Fork, UT, daughters, Lindsey Inkster of Phenix City, AL, and Katie Inkster of Greenwood, SC. Her treasured grandchildren, Kaden, Jaxon, and JayCee Mitchell (Mike & Kelly), Anthony and Kyle Parmer (Lindsey). As well as her sisters Sherrie (Butch) Scott of Salem, UT, Anne (Mike) Biamonte of Pleasant Grove, UT, Laurel (John) Gervasi of Chesterland, OH, and brother, Robert (Dalene) Bischoff of Orem, UT. And many nieces and nephews who loved their "Cool Beans Aunt Holly". The family would like to extend a warm hand of gratitude to the Johnathan and Caitlyn McPherson Family, for loving Holly as family. Services will be held at the Walker Sanderson Mortuary 646 E 800 N, Orem, UT 84097, on January 4th, 2021. Friends and loved ones are invited to a viewing from 10:30-11:30 am. Due to current Covid Pandemic restrictions, Services will be limited to Family only, unless personal invitation by Michael (son). Interment will immediately follow at the Payson City Cemetery. In respect to current State restrictions, the family asks that we limit those in attendance, leaving small young children home. Please respect social distancing guidelines and remember your mask. There will be a live stream of the service on Monday starting at 12 noon.
